What I Made Today

I had a huge block of chocolate from Awfully Chocolate, 2 pounds, actually. I decided to use up half of the block to make some yummy chocolate truffles, and will try another recipe maybe on Monday. The rest of the stuff needed was stuff that I already had lying around- cream cheese, icing sugar, vanilla essence. Yup, that's all you needed really.

It's not as hard as I thought it would be. A tad tedious when it comes to shaping the truffles into little balls, and very messy when rolling them in cocoa powder. But the finished product was well worth the effort and time spent. These truffles were so tasty, and so rich. I was too tired to shape all of them, so I've got a whole bunch left in the fridge that I'll do up tomorrow.

Yummy Chocolate Truffles
Ingredients:

1 package (8 ounce) cream cheese
1 cup icing (confectioner's sugar) or more if you like it sweeter- the original recipe called for 3 cups, but that would have been too sweet for my tastebuds
3 cups chopped dark chocolate
1 1/2 teaspoons vanilla essence
Cocoa powder

Instructions:
In a medium glass bowl, melt the chocolate, whisking frequently, until just smooth. This can be done by placing the bowl over a small saucepan of gently simmering water. In a seperate large bowl, beat cream cheese until smooth. Gradually beat in confectioners' sugar until well blended. Stir in melted chocolate and vanilla until no streaks remain. Refrigerate for about 1 hour. Shape into 1 inch balls and coat with cocoa powder.
